Quick and Easy Chili Recipe



I work a lot, so I am all about finding easy ways to eat healthy. It is also pretty cold this time of year, so we eat soups more than we do any other time.


This is my go to chili recipe! This is what my mother calls a "dump and go" recipe. I got it years ago from a Weight Watchers magazine. It is healthy and lean. I use really lean ground round, ground turkey or ground venison (I have even made it with meatless vegetables crumbles, for you vegetarians out there). I make cornbread (gluten free or otherwise) and a huge salad to have with it. It is so easy! Do not let the simplicity of it make you think it isn't good. It has chocolate in it, so how can that taste bad?!


Ingredients

1 lb. ground round, turkey or venison

1 cup finely chopped onion

1 (14.5 oz) can diced tomatoes with garlic undrained

1 (15 oz) can kidney beans rinsed and drained

1 cup hot water

2 Tbsp chili powder

1 oz semisweet chocolate coursely chopped ( I use 2 Tbsp of semisweet chocolate chips )

1 tsp ground cumin

1 tsp salt

1/2 tsp dried oregano


Directions

Cook meat with the onion in a large saucepan over medium heat until browned. Drain if necessary and return to pan. Add tomatoes and remaining ingredients, then bring to a boil. Reduce heat and simmer 5 minutes.


Makes about 6 - one cup servings.
