Bring Back Pizza Night!

HAVE YOURSELF A PIECE OF PIZZA. Yes! Pizza, you read correctly. Sometimes, there is just nothing better than a piece of warm, fresh out of the box pizza. This recipe puts a healthier spin on one of our favorite “cheat” meals. Try this sweet potato crust recipe next time your pizza craving comes!



Recipe


Ingredients

  • 2 cups of sweet potatoes, cooked

  • 1 cup flour

  • 1 egg

  • 1/4 cup of arrowroot powder or corn starch

  • 1 tbsp olive oil

  • 1 tbsp red wine vinegar (can also use white)

  • 1 tsp Italian Seasoning or Oregano

  • 1/4 tsp of sea salt

  • 2 tsp minced garlic (to brush along the edges of the crust)

How To


Start by baking two sweet potatoes at 400 degrees for 40 minutes or until the insides are soft. Scoop out the insides of the potatoes and mash them in a mixing bowl. Add the egg, flour, arrowroot powder or cornstarch, olive oil, white wine vinegar, Italian seasoning or oregano, and sea salt. For the flour, I like to use a gluten-free flour. I started making it with almond flour then switched to coconut flour, but I have decided that the almond flour is the best way to go. I have not been able to find arrowroot powder in my last few trips to the grocery store, so I used cornstarch that I had in the pantry and could tell no difference! Another swap I make occasionally is white wine vinegar for red wine vinegar. Maybe it is pure laziness or maybe it is using up my pantry, but I just use whichever one I have on hand.


Mix this all together and then press onto a pizza pan or cooking sheet. Note that the crust will not feel like a usual pizza crust. The better mashed the potatoes are, the better the crust will be. Spending a few extra minutes mashing the sweet potatoes will prevent the crust from getting too flaky. Bake this at 425 for 20-30 minutes or until the edges are brown.


In this picture below, we used purple sweet potatoes which gives the crust a white color instead of orange - so do not worry about the color next to the picture!


Take the crust out, and begin to add your favorite pizza sauces and toppings. I even brush some garlic along the edges for extra flavor! My go-to lately has been garlic pizza sauce on one side and Trader Joe’s Vegan Pesto on the other. You will not have any regrets after this pizza night!!

  • bell peppers

  • chicken

  • salami or pepperoni

  • olives

  • brussel sprouts

  • dairy-free almond cheese (Trader Joe's)

  • pineapple
