Apple Pie Steel Cut Oats

With the weather cooling down, fall foods just taste better and better. Today, we wanted to share a recipe full of ALL the fall flavors with the added benefit of warming you up. I cannot wait for you all to try this recipe - Clean Apple Pie Oats!


Ingredients:

Servings: 5 (scale down for fewer people)

- 1 tablespoon butter

- 1 cup steel cut oats

- 3 cups of hot water

- 1 cup of milk (could also use dairy-free milk if needed or desired)

- 2 apples, skinned (read below) and chopping

- 1 teaspoon vanilla

- 1/2 teaspoon of cinnamon

- 1/8 teaspoon of nutmeg

- 1/8 teaspoon of salt

- 1/8 teaspoon of allspice

- 10 teaspoons of maple syrup

- 5 tablespoons of chopping walnuts

Instructions:

In a saucepan, melt the butter and toast the oats until they appear golden brown. Then, add in the water and apples. I wanted to note here that I did not skin my apples, because I enjoy the apple skin! So, just make a note that the skinned part is personal preference. After combining this, let it simmer for 20 minutes - stirring just enough so that the bottom does not burn.

Then, combine the milk, vanilla, cinnamon, nutmeg, allspice, and salt. Cook this combination for 10 minutes. Remove it from the heat, and let it sit for about 3 minutes. Divide this between the 5 servings - or however many servings you prepared - and drizzle with 2 teaspoons of maple syrup and 1 tablespoon of the chopped walnuts.
